Those long summer nights are slowly fading for another year and whilst some of us are finding it difficult adjusting to reality after a fun filled summer. Some of us are preparing for those cosy nights in with a hearty meal…AKA us! Although summer is a time for fresh greens, BBQ’s on the beach and sometimes a liquid lunch! Autumn is when we get down to the good stuff, the food that makes us feel good, because lets face it no one smiles at a salad. Autumn is the season where we can appreciate ingredients such as orchard fruits, root vegetables and wild game, creating dishes that are rich in both colour and flavour.

So here are a few favoured robust dishes to try this Autumn…

Beef Stew

  • 1000g of braising beef, diced
  • 350ml of beef stock
  • 4 large carrots, peeled and diced
  • 1 large onion, large dice
  • 4 garlic cloves, large, smashed
  • 750ml of red wine
  • 140g of tomato paste
  • 2 tsp thyme, dried
  • 12 baby onions, peeled
  • 200g of button mushrooms 
  • 1 tbsp of brown sugar
  • 5 tbsp of olive oil
  • 2 pinches of salt
  • 2 pinches of black pepper


Ham Mac ‘n’ Cheese

  • 400g of macaroni pasta
  • 180ml of single cream
  • 100g of half fat crème fraîche
  • 1 tsp English mustard
  • 200g of half fat medium cheese, grated
  • 4 slices of cooked ham, chopped 
  • 1 tsp rapeseed oil
  • 1 pinch of black pepper
  • 1 pinch of salt


French Onion Soup

 French onion soup

  • 1kg medium onion, brown, sliced
  • 5 tbsp of olive oil
  • 6 sprigs of thyme
  • salt
  • pepper
  • 1 tsp soft brown sugar
  • 2 garlic cloves, large, peeled and crushed
  • 250ml of dry white wine
  • 5l beef stock
  • 3 tsp veal jus

Gruyère toasts

  • 12 slices of baguette
  • 250g of Gruyère


Apple and Rhubarb Crumble

Crumble topping

  • 500g of muscovado sugar
  • 330g of ground almonds
  • 800g of flour
  • 500g of butter
  • 160g of flaked almonds
  • 130g of hazelnuts, nibbed
  • 1/2 nutmeg, grated

Fruit filling

  • 1000g of Bramley apple, peeled, cored and diced
  • 500g of rhubarb, chopped
  • 160g of brown sugar
  • cinnamon to taste


  • 350ml of double cream
  • 350ml of whole milk
  • 1 vanilla pod, split
  • 4 egg yolks
  • 125g of caster sugar


Brioche Bread and Butter Pudding

  • 1 brioche loaf, sliced
  • 500ml of milk
  • 50g of white chocolate, broken into pieces
  • 1 orange, zested
  • 1 dash of vanilla extract, or essence
  • 50g of caster sugar
  • 2 eggs


So when those cold nights set in we want to make sure you are taken care of, by cosying up next to the fire with a warming bowl of delicious grub and as long as your left smiling we couldn’t be happier.
